Step 1: Cook 2 cups short-grain white rice according to package directions. While rice cooks, thinly slice 1 medium carrot and 1 medium zucchini into matchsticks.

Step 2: Heat 2 tablespoons oil in a large skillet over medium-high heat. Sauté carrot and zucchini separately (1-2 minutes each) with pinch of salt. Set aside on a plate.

Step 3: In the same skillet, cook 8 oz ground beef (or plant-based ground substitute) with 1 tablespoon soy sauce and 1 minced garlic clove until browned, about 4-5 minutes. Set aside.

Step 4: Fry 1 egg sunny-side up in the skillet, keeping yolk runny.

Step 5: Divide warm rice between 2 bowls. Arrange cooked vegetables and beef in sections on top like spokes on a wheel. Place fried egg in center. Drizzle 2 tablespoons gochujang mixed with 1 tablespoon sesame oil over the top. Mix everything together vigorously and serve immediately while hot.
