Instructions

    Step 1: Rinse your live crabs under cold running water and gently clean the shell with a soft brush. Pat dry with paper towels. Using a sharp knife, carefully split each crab in half lengthwise, then cut each half into 3-4 pieces (legs, claws, and body sections). If you're uncomfortable with live crabs, ask your seafood counter to do this step.

    Step 2: In a mixing bowl, combine soy sauce, water, sugar, minced garlic, ginger, and red pepper flakes. Stir until sugar dissolves completely. Taste the marinade — it should be salty but balanced, not overpowering.

    Step 3: Place crab pieces in a glass or ceramic container (avoid metal, which can react with the marinade). Pour the marinade over the crab pieces until fully submerged. Add sesame seeds and sliced green onions. Stir gently to distribute.

    Step 4: Cover the container and refrigerate for at least 4-6 hours, but ideally overnight. The longer it sits, the more flavorful it becomes. The raw crab will cook slightly in the salty marinade.

    Step 5: Before serving, stir the ganjang gejang and serve cold or at room temperature with steamed white rice. Scoop rice into a bowl, add a piece of crab and a spoonful of marinade on top. Eat and repeat — you won't be able to stop.
