Instructions

    Step 1: Cook 2 cups short-grain rice with water (1:1 ratio). Once cooked, transfer to a bowl and mix in 3 tablespoons sesame oil, 1 tablespoon salt, and 1 teaspoon sugar while rice is still warm. Let cool for 5 minutes.

    Step 2: Lay one sheet of nori (seaweed) shiny-side down on a bamboo mat. Spread a thin layer of cooled rice (about ½ inch thick) evenly across the nori, leaving a ½-inch border at the top.

    Step 3: Arrange your fillings in horizontal lines across the rice: cooked diced carrots, cucumber strips, scrambled egg, imitation crab (or cooked ham), pickled radish, and spinach. Keep fillings in the center third of the nori.

    Step 4: Using the bamboo mat, tightly roll the kimbap away from you, pressing gently as you go. Seal the top border by lightly wetting it with water, then pressing to close.

    Step 5: Slice the rolled kimbap into 1-inch pieces using a sharp, wet knife (wet the blade between cuts for clean slices). Arrange on a plate, drizzle lightly with sesame oil, and serve at room temperature with soy sauce or gochujang mayo for dipping.
