- 2 tablespoons finely diced Carrot (finely diced)
Instructions

Beat 3 eggs with 1 tbsp milk, pinch of salt, and pinch of sugar until smooth

Heat a small non-stick pan over medium-low, brush lightly with butter

Pour in 1/3 of the egg mixture, swirl to coat pan evenly

When edges just set (center still wet), fold one edge inward 1 inch, roll tightly to opposite side

Push the roll to one end, pour another 1/3 of egg, lift the roll to let raw egg flow underneath

Repeat once more — you now have a thick layered log, slice into 1-inch rounds
