Step 1: Crack 4 eggs into a bowl and whisk together with ¼ teaspoon salt and ¼ teaspoon ground black pepper until well combined. Finely chop your vegetables (carrot, zucchini, ham, green onion) into small pieces and stir into the egg mixture.

Step 2: Heat 1 tablespoon vegetable oil in a non-stick 8-inch skillet over medium heat. Once hot, pour half the egg mixture into the pan and swirl to create a thin, even layer.

Step 3: When the bottom is set but the top is still slightly wet (about 1-2 minutes), use a spatula to gently roll the egg from one end, like a burrito. Push the rolled portion to the side of the pan.

Step 4: Add remaining oil to the empty side of the pan and pour in the rest of the egg mixture. Once partially set, roll it over the existing roll, creating one larger spiral.
