Vincenzo Galbijjim (갈비찜)

K-DramaVincenzo·In Vincenzo, galbijjim represents the ultimate expression of Korean maternal love and luxury comfort—a dish reserved for family celebrations and moments when a mother wants to say 'you matter' without words. The tender, fall-off-the-bone short ribs braised in a savory-sweet glaze embody the care that defines Korean family bonds.

Why this food?

Galbijjim is Korea's most beloved braised short rib dish—tender, glossy, and deeply savory. It's the kind of luxury comfort food Korean mothers prepare for special occasions to show love through painstaking slow-cooking. This iconic Vincenzo dish proves that the most meaningful moments in K-drama happen around a table with food that took hours to perfect.

🇰🇷 K-Culture Tip

Galbijjim dates back to Korean royal court cuisine and was traditionally reserved for yangban (nobility) families. Today, it's the ultimate expression of filial piety—when Korean children want to honor their parents, they often prepare galbijjim. The dish requires patience and skill, making it a rite of passage for home cooks mastering Korean cooking.

Walmart edition

  • 2 lbs Beef Short Ribs (bone-in)
  • 3 tbsp Kikkoman Soy Sauce or Great Value Soy Sauce
  • 2 tbsp brown sugar + 1 tbsp sesame oil Great Value Brown Sugar + Great Value Sesame Oil

Instructions

  1. 1

Step 1: Blanch 2 lbs beef short ribs in boiling salted water for 5 minutes, then drain and rinse under cold water to remove impurities. Pat dry with paper towels.

  2. 2

Step 2: In a large braising pot or Dutch oven, combine the blanched ribs with 3 cups water, 4 dried shiitake mushrooms (or substitute with 6 dried jujubes for sweetness), 6 garlic cloves (minced), 3 tbsp soy sauce, 2 tbsp brown sugar, 1 tbsp sesame oil, and 1 tsp ground black pepper. Stir well.

  3. 3

Step 3: Bring to a boil over high heat, then reduce to medium-low. Cover partially and simmer for 1.5 hours, stirring occasionally. The ribs should be very tender and the liquid reduced by half.

  4. 4

Step 4: Increase heat to medium-high for the final 15 minutes to caramelize the sauce, turning ribs occasionally so they're coated in the glossy, dark braising liquid. The sauce should cling to the meat.

  5. 5

Step 5: Transfer to a serving platter, pour remaining sauce over the ribs, and garnish with sesame seeds and thinly sliced green onions. Serve immediately with steamed rice and kimchi.
