호떡 was introduced to Korea by Chinese merchants in the late 19th century and evolved into something distinctly Korean. Many Koreans say they cannot eat hotteok without thinking of their grandparents.

- 1/2 cup Dark brown sugar
- 1 packet (2.25 tsp) Active dry yeast
Instructions

Mix dough: 2 cups flour + 1 yeast packet + 1 tsp sugar + 3/4 cup warm water + pinch salt, rest 1 hour

Mix filling: 1/2 cup brown sugar + 1 tsp cinnamon + 2 tbsp chopped walnuts (optional)

Divide risen dough into 8 golf ball-sized portions

Flatten each ball in palm, add 1 tbsp filling, seal edges and re-ball tightly

Pan-fry in 1 tbsp butter over medium heat 2 minutes each side, pressing flat with spatula as it cooks
